March’s Recipe: Irish Breakfast
Corned Beef Hash and Irish Coffee

Cook Time: 35 minutes Servings: 4
Corned Beef Hash Ingredients
2 tsp canola oil
1 large onion, chopped
4 cups diced cooked potatoes, or frozen hash-brown potatoes
1 cup chopped lean corned beef brisket
1/2 cup chicken broth
1/4 cup parsley, chopped
4 large eggs
Salt and pepper to taste
Directions
1.) In a large cast iron skillet, heat canola oil over medium high heat. Add onions and sauté until they start to brown.
2.) Add potatoes. When they are golden, add the corned beef and broth. Cook, scraping up any browned bits until liquid is absorbed.
3.) Add parsley, salt, and pepper.
4.) Fill a separate skillet with 2 inches salted water, bring to a gentle simmer. Break eggs, one at a time, onto a saucer, and slide into simmering water. Poach eggs until they are at desired firmness.
5.) Serve hash with eggs on top.
6.) Realize you really need your coffee too. (Don’t worry, we got you!)

Irish Coffee Ingredients
1/4 cup heavy whipping cream
3 cups strong brewed coffee
4 tbsp Irish whiskey
3 tbsp light brown sugar
Directions
1.) Place cream in a small bowl; beat with an electric mixer until stiff peaks form. Usually takes 1-2 minutes.
2.) Pour 1 1/2 cups coffee, 2 tbsp of whiskey, 1 1/2 tbsp of brown sugar into a cup. Stir to combine and top with whipped cream. Then do all of this again, but in a different cup.
3.) Now you can enjoy your Irish Breakfast!
